Wineries do not make flavour: flavour comes from grapes. However, we influence the journey from vineyard to bottle with a range of decisions in the winery. We generally use native yeasts and bacteria to ferment grapes rather than inoculating with packets. We handle juice in an oxidative manner. We use new oak to add complexity to wine rather than to dominate it. We use only French oak (not American oak).
We like wines that are savoury and interesting rather than forward and fruity. That means picking ripe grapes with the lowest sugars possible to keep alcohols down and making wines which speak of their natural acid and tannin structures
At Foxeys Hangout winery, located in the cool hill country of Victoria's beautiful Mornington Peninsula, brothers Michael and Tony Lee produce a select range of sparkling wines made by the exacting method pioneered in France's Champagne region, and the uniquely Australian wine known as sparkling shiraz.
Since the 1980s, the southern Victorian wine regions around Melbourne have earned an international reputation for excellence in sparkling wine thanks to the dedication of a small number of winemakers and the area's proven track record in growing the Champagne varieties pinot noir, pinot meunier and chardonnay.
Hand-tended and made by hand, the Foxeys wines are the Lee brothers' personal expression of regional integrity, respect for the vineyard, exacting winemaking and exciting flavours.
Wine is made to drink with food. If you come to try our wines you may stay for a light lunch in our cellar door of small plates to share.
Winemaker Tony Lee is a qualified chef: his dishes complement the wines. Many dishes change seasonally.
